BLUEBERRY LEMON LOAF
1/3 cup butter, melted
1 cup granulated sugar
3 tbsps lemon juice
2 large eggs
1-1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 tbsps grated lemon peel
1 cup fresh or frozen blueberries
Glaze:
2 tbsps lemon juice
1/4 cup granulated sugar
PREPARATION: In mixing bowl, beat butter, sugar, juice and eggs. In a separate bowl, combine flour, baking powder and salt; stir into egg mixture alternately with milk. Stir in peel and blueberries.
Pour into a greased 8”x4”x2” loaf pan. Bake at 350F for 60-70 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes. Meanwhile, combine glaze ingredients. Remove loaf from pan and drizzle with glaze. Cool on a wire rack.
Makes 1 loaf.
